PCOS Recipe Strawberry and Spinach Salad

This PCOS recipe for Strawberry and Spinach Salad is really quick and easy. Serve it with a balsamic vinaigrette or make your own vinaigrette.

Ingredients

  • 1 bunch of spinach
  • 2 cups sliced strawberries
  • 1/2 cup of walnuts or pecans (if desired)
  • 1/2 cup of Feta or Goat Cheese (if desired)

Simple Vinaigrette

  • 1/4 cup Olive Oil
  • 1 Tablespoon of White Wine Vinegar or Raspberry Balsamic Vinegar
  • 1/8 Teaspoon of Salt
  • 1/8 Teaspoon of Pepper

Directions

  • Rinse spinach and cut into bite size pieces

  • Slice strawberries

  • Toss the spinach and strawberries together in a large bowl

  • In a medium bowl whisk together all ingredients for the vinaigrette. It can be refrigerated or served immediately.

Note- This salad typically serves about four people. I normally sprinkle the cheese or nuts onto each individual salad then the dressing. It can also be all tossed together before serving.
