PCOS Recipe Cowgirl Chili

There is noting better than chili for a PCOS recipe; it's healthy with protein and vegetables. I love a delicious bowl of chili especially on a cool fall day or cold winter night! I look cooking chili because it's healthy, fulfilling, and freezes well to be eaten later.

Ingredients

  • 1 pound lean ground beef

  • Salt & freshly ground pepper, to taste

  • 1 1/2 tablespoons canola oil, divided

  • 1 red onion, chopped

  • 1 green bell pepper, seeded and chopped

  • 2-3 small red potatoes, chopped

  • 1/2 Cup of Canned Corn

  • 6 cloves garlic, minced

  • 1-2 jalapeño peppers, finely chopped with seeds

  • 2 tablespoons ground cumin

  • 2 tablespoons chili powder

  • 1 tablespoon paprika

  • 2 28-ounce can diced tomatoes

  • 3 19-ounce cans dark kidney beans, rinsed

Directions

  • Add 1/2 a tablespoon of canola oil to a hot skillet or dutch oven along with 3 minced garlic cloves, 1/2 of red onion, and a little salt and pepper. Then add beef. Cook over medium heat until done, probably 3 to 5 minutes. Set beef aside.

  • Add 1 tablespoon of canola oil, 1/2 of red onion, 3 minced garlic cloves, green pepper, jalapeños, potatoes, and spices. Sauté until garlic and onions are slightly done.

  • Add the tomatoes. Add the cooked beef back in. Simmer on low for at least one hour.

  • Add the kidney beans and simmer for 30 to 45 minutes, until the beans are cooked. Salt, pepper, or season to taste.

    It's ready to serve, it should be about 8 one-cup servings. Enjoy!
