PCOS Recipe White Chicken Chili
A PCOS recipe that is a fall and winter favorite at my house; especially since it's pretty quick and easy to make! Ingredients - 1 tablespoon canola oil
- 1 1/2 cups chopped onion
- 3 cloves of garlic, minced
- 2 4-ounce cans chopped green chilies
- 1 teaspoon ground cumin
- 1/8-1/4 teaspoon cayenne pepper
- 3 15-ounce cans great northern beans, rinsed
- 4 cups chicken broth
- 4 cups diced cooked skinless chicken
Directions - In a skillet or dutch oven over medium heat add oil, onion, garlic, chilies, cumin, and cayenne pepper. Cook for about 5 minutes, until the onions are softened.
- Add beans and broth, bring to a simmer.
- Cook for about 20 minutes stirring occasionally.
- Then add the cooked chicken breasts. Simmer for about 5 minutes.
- Makes about 6 servings and is much quicker than than traditional chili
