PCOS Recipe White Chicken Chili

A PCOS recipe that is a fall and winter favorite at my house; especially since it's pretty quick and easy to make!

Ingredients

  • 1 tablespoon canola oil

  • 1 1/2 cups chopped onion

  • 3 cloves of garlic, minced

  • 2 4-ounce cans chopped green chilies

  • 1 teaspoon ground cumin

  • 1/8-1/4 teaspoon cayenne pepper

  • 3 15-ounce cans great northern beans, rinsed

  • 4 cups chicken broth

  • 4 cups diced cooked skinless chicken

Directions

  • In a skillet or dutch oven over medium heat add oil, onion, garlic, chilies, cumin, and cayenne pepper. Cook for about 5 minutes, until the onions are softened.

  • Add beans and broth, bring to a simmer.

  • Cook for about 20 minutes stirring occasionally.

  • Then add the cooked chicken breasts. Simmer for about 5 minutes.

  • Makes about 6 servings and is much quicker than than traditional chili
