PCOS Recipe Avocado Salad
This PCOS recipe is a very quick and delicious summer salad. It's refreshing and takes less than five minutes from refrigerator to table. It makes a great addition to any backyard dinner. Ingredients - 1 teaspoon Dijon mustard
- 1/4 cup extra-virgin olive oil
- 1/2 cup balsamic vinegar
- 1 pinch ground black pepper
- 1 avocado - peeled, pitted and sliced
- 2 small tomatoes, each cut into 8 wedges
Directions In a small bowl whisk together Dijon mustard, extra-virgin olive oil, balsamic vinegar, and pepper. Slice the avocado and tomato into small wedges. On a plate make a circle alternating avocado and tomato. Finish by drizzling the dressing.
