PCOS Recipe Three Bean Chili
This PCOS recipe for three bean chili is one I really enjoy; the different beans and vegetables make for a colorful dish that's quite tasty. Ingredients - 2 tablespoons of cumin
- 2 tablespoons of chili powder
- 1 tablespoon of paprika
- 1 tablespoon of canola oil
- 1 pound of lean ground beef
- 1 red onion, chopped
- 1 green pepper, seeded and chopped
- 6 garlic cloves, minced
- 1 28-ounce can of tomatoes, diced * 1 cup of water
- 1 19-ounce can of kidney beans, rinsed
- 1 19-ounce can of white beans, rinsed
- 1 19-ounce can of black beans, rinsed
- Salt and pepper to taste
Directions - Add oil, garlic, and onion and spices to a hot skillet or dutch oven. Add green pepper cook for two to three minutes. Add beef and cook until browned.
- Add tomatoes, water, and beans. Simmer for 30 to 45 minutes. Salt, pepper, or other seasons to taste.
Alteration: This can also be a vegetarian chili, if I cook it without beef I normally add 1 to 2 carrots and a 2 small red potatoes. If you choose the vegetarian option, it will have to cook longer because of the carrots and potatoes.
